The Pickle Factory, a new emporium for all things tart and tangy, is set to crack open its briny barrels this week in St. Augustine.
Located in a 1926 building that once housed a Coca-Cola plant at 239 San Marco Avenue, The Pickle Factory blends nostalgia with a squeeze of culinary creativity.
Starting Friday, guests can browse gourmet pickles, specialty snacks, and branded goodies, or snag a quick bite at the “pickle window,” where pickles on a stick promise a snappy snack and a photo-op in one.

Founders Shai and Charlotte Tzabari first built their pickle reputation with Olive My Pickle, a St. Augustine Amphitheatre Farmer’s Market favorite for 15 years.
They opened their thriving flagship location in Jacksonville in 2024 at 5913 in the Lakewood neighborhood before pickling into St. Johns County.
With family recipes passed down through generations, they’ve earned a loyal following by keeping things tart, tantalizing—and appropriately eccentric.
“We are incredibly excited to open our doors and be back in the St. Augustine community and welcome long-time fans and new guests to experience the next chapter at The Pickle Factory,” Charlotte said in a release.

Grand opening weekend will highlight signature pickle creations, and exclusive St. Augustine-only items.
“St. Augustine has such a vibrant spirit and sense of connection, and we’ve designed this space to be more than just a store it’s a place for people to gather, discover something new, and share a little joy around food and fun,” the owners said ahead of Friday’s festivities.
