The Old City is raising a collective glass to Philip McDaniel.

The pioneering CEO and Co-Founder of St. Augustine Distillery has announced his retirement after more than a decade of leadership that helped to elevate the Sunshine State’s spirits industry.

McDaniel will move into the honorary role of Founder Emeritus, continuing to support the company in an advisory capacity, the company announced on Facebook.

Founded in 2013, St. Augustine Distillery was established by McDaniel and a group of local investors with a shared vision: to create world-class spirits using Florida-grown ingredients.

The distillery officially opened to the public in March 2014 in a restored 1907 ice plant in downtown St. Augustine.

Since then, it has become a premier destination for locals and visitors alike, welcoming over 1.5 million guests through its doors.

With McDaniel at the kettle, the distillery developed a range of award-winning craft spirits—including bourbon, rum, gin, and vodka—made with a commitment to sustainability and regional sourcing.

The company also became known for its educational tours, tasting experiences, and its role in revitalizing the local food and beverage scene.

McDaniel was also an advocate for the broader craft spirits industry in Florida, pushing for legislative changes that benefitted independent distillers throughout the state.
